<p>Chicken Taco Dip is best served warm fresh from the oven!</p>



<p>If you want to make this in advance, I would follow all the steps in the recipe up until baking. Cover the unbaked dip and store in the fridge.</p>



<p>When ready to serve, bake the dip for about 25 minutes&#8211;or until the cheese is melted and bubbly.</p>

<p>I use a Mexican cheese blend with Colby, Monterey and Cheddar cheese in this chicken dip. It has a nice balance of sharp and mild flavors.</p>



<p>If you don&#8217;t have a Mexican cheese blend handy, you can make this dip with shredded cheddar, Monterey Jack or Colby Jack instead.</p>

<p>The star ingredient is Shamrock Farms Sour Cream. I&#8217;ve used it and more of their delicious products in recipes both here on my blog (see below), and at home in my kitchen.<br />
I always have <a href="https://www.shamrockfarms.net/" target="_blank" rel="nofollow noopener">Shamrock Farms</a> items on hand in my fridge, especially their sour cream because not only do I use it&nbsp;<em>in&nbsp;</em>recipes, but we also use it as a topping for tacos, <a href="https://www.365daysofbakingandmore.com/day-187-chicken-nachos-and-in-the-kitchen-zone/">nachos</a>, and soups.</p>

<h2>Tips for making this Jalapeno Ranch Dip &#8211;&nbsp;</h2>
<ul>
<li>Use Shamrock Farms sour cream. You&#8217;ll be so happy when you do because you and your family and friends will be able to taste the difference.</li>
<li>This recipe is beyond easy to put together.<br />
I use this hand mixer to mix the Shamrock Farms sour cream, cream cheese, and Ranch dressing mix.<br />
This spatula is perfect for folding in the shredded cheese and diced jalapeños.&nbsp;</li>
<li>I found it easiest and that it tastes better when I use a packet of dry Ranch dressing mix as opposed to using regular Ranch dressing. There&#8217;s just more flavor.</li>
<li>I used one jalapeño, but if you like it kicked up a bit feel free to add another. A bit of Sriracha would be a great addition as well!</li>
<li>It can be served immediately after making, but I like to refrigerate it for at least an hour to give all the flavors a chance to blend.</li>
<li>We love it served with crackers, but it&#8217;s great with chips and a sliced baguette as well.</li>

<p>Last Thursday night, I went to my very first college football game!</p>
<p><span id="more-11712"></span></p>
<p>I&#8217;ve been to numerous football games throughout my life and continue to watch quite a bit on tv, but have never had the opportunity to go to one in a college setting.</p>
<p>After I graduated high school, I went to a small college in Rhode Island. To tell you the truth, I don&#8217;t believe we even <em>had</em> a football team. There certainly wasn&#8217;t a stadium anyway and I was too busy as a theater major to notice or go to games anyway.</p>
<p>But last Thursday!!!</p>
<p>I was very excited to go and Kurt was going to go with me, but we decided it probably wasn&#8217;t best. We&#8217;d have to leave <a href="https://www.365daysofbakingandmore.com/furry-friend-friday-2/">the puppy</a> in his crate for the game only to come home and put him back in it for bed.<br />
Besides, there was a baseball playoff game that night which was<em> pretty</em> important. haha</p>
<p>I decided to go on my own and if you watched my <a href="https://www.instagram.com/365daysofbaking/" rel="nofollow sponsored noopener" target="_blank">Instastories</a> last Thursday, you saw how excited I was, especially to participate in <a href="https://www.shamrockfarms.net/" rel="nofollow noopener" target="_blank">Shamrock Farms</a> Rockin&#8217; Protein Pushup Challenge!</p>

<p>I&#8217;ll tell you why I was so excited to do my pushups!<br />
At last Thursday&#8217;s game for ASU against Stanford, as well as at upcoming football games on 11/3, 11/10 and the Duel in the Desert game on 11/24, Shamrock Farms Rockin Protein is hosting a Protein Pushup Challenge. <strong>For every pushup you do in 30 seconds, they will be donating a serving of milk to the St. Mary&#8217;s Food Bank Alliance.</strong></p>
<h2>Shamrock Farms will be donating up to 50,000 servings of pure, fresh milk to nourish the community. That&#8217;s double last year&#8217;s program donation!</h2>
<p>I encourage you to participate online as well with #ProteinPushupChallenge to show us how many pushups you can do in 30 seconds.</p>

<p>Since I figured there&#8217;d be a lot of traffic I left with plenty of time to arrive before kickoff. Unfortunately, I ran into extra unexpected traffic, walked in just before halftime, and missed the challenge. I wasn&#8217;t happy.</p>
<p>I was happy though to see that ASU has such a strong partnership with Rockin Protein because it&#8217;s such a delicious and nutritious beverage. I&#8217;m in LOVE with the vanilla flavor!!</p>

<p>Muffins have always made me feel all warm and fuzzy.</p>

<p>When I was young, I remember going to our local donut shop, and in addition to ordering my favorite lemon-filled donut, I&#8217;d order an apple cinnamon muffin. They were the best! They were filled with bits of apple, loaded with cinnamon and were so light and fluffy.</p>
<p>Throughout the years, I&#8217;ve tried to recreate them but haven&#8217;t had much luck. These Apple Streusel Muffins are as close as I’ve come! What makes them special though is the streusel. The ones from my childhood didn&#8217;t have a topping. They were just darn delicious on their own. But these&#8230;</p>

<p>While perusing the interweb for more great apple recipes in addition to my Apple Streusel Muffins, I came across some keepers! This Cinnamon Apple Pie Bread from Ashley&#8217;s Wishes &amp; Dishes must smell absolutely incredible when it&#8217;s baking! I can&#8217;t wait to make it!</p>
<p>And who doesn&#8217;t love a good apple crisp? This one from Christi at Love From the Oven is sure to bring a lot of smiles to a lot of faces. Top it with a scoop of vanilla ice cream, and they&#8217;ll love you forever!</p>
<p>If you&#8217;re a gardener, you&#8217;ve probably got an abundant supply of zucchini this time of year, am I right? Satisfy your love of apples and use up some of that zucchini in this Carrot Apple Zucchini Bread from Trish at Mom on Timeout!</p>

<h2>Tips to make your Apple Streusel Muffins &#8211;</h2>
<ul>
<li>I used Pink Lady apples. I originally made the recipe with Gala apples, but didn&#8217;t like the taste. They were too blah. I was very happy I made the switch!</li>
<li>Coarsely chop your apples. I chopped the apples into small pieces, but later made them bigger and was happier with that result as well. Bigger is better, I suppose.</li>
<li>When mixing, be sure to not overmix. It can make the batter more dense and chewy, which you don&#8217;t want. It is ok if you still see some flour throughout the batter.</li>
<li>Instead of just the cinnamon, use 2 teaspoons of this <a href="https://www.365daysofbakingandmore.com/apple-pie-spice/">homemade Apple Pie Spice</a> to boost the flavor of these muffins!</li>

<li><strong>Freeze the bananas &#8211; </strong>peel two bananas, break into smaller pieces and place in a Ziploc&nbsp;bag to freeze overnight. You can put the bananas into the freezer without peeling, but it&#8217;s a royal pain the neck to take the skin off&nbsp;once they&#8217;re frozen. Believe me, I&#8217;m trying to save your fingers and your sanity!</li>
<li>If you want to enjoy this recipe on your way to work, make it a smoothie instead of a smoothie bowl! Use just one frozen banana.</li>
<li><strong>Use a variety of toppings &#8211;</strong>&nbsp;I liked the fresh banana slices, unsweetened coconut, sliced almonds and chocolate chips. You can add whatever you like. Strawberries on top would be delicious, too!</li>
<li><strong>Chill the bowl &#8211;&nbsp;</strong>you can prevent the smoothie from melting quickly (especially in this upmpteen bazillion degree Arizona heat! haha) by placing the bowl into the freezer for about 15 minutes before you make the recipe.</li>

<p>I love purchasing Shamrock Farms products and sharing them with you. I have been buying them for years since we moved to Phoenix years ago. All of their products have a farm-fresh taste.
