I’ve got nothin’ to say.

Sometimes I can go on and on and talk your ear off with my nonsensical gobbledy gook, but today, I’m at a loss for words.
I guess maybe because nothin’ much has been going on which of course, you could say is a good thing.
No strange woman trying to get in our front door at 11:30 at night.
No, hotel living for 5 days as we move from one rental into another.
And we aren’t moving to the other side of the country, so it’s all good.

Occasionally, you just need to sit in the silence and just listen.
I think that today is just one of those days.

Oreo Pudding Dream Bars

Yield: one 8 X 8-inch dish

Ingredients

  • 1 package Oreo cookies, divided
  • 4 tablespoons butter (1/2 stick) butter, melted
  • 4 ounces cream cheese
  • 1/2 cup confectioners’ sugar
  • 1 8-ounce container Cool Whip, divided
  • 1 4.2 ounce package instant Oreo pudding mix
  • 1 cup milk

Instructions

  1. Preheat the oven to 350 degrees F.
  2. In a blender or food processor, finely crush 18 of the cookies.
  3. In a medium bowl, mix together the melted butter and finely crushed cookies until well moistened.
  4. Press into an ungreased 8 X 8-inch baking dish.
  5. Bake for 10 minutes.
  6. Allow crust to cool completely before proceeding.
  7. In the meantime, mix the package of pudding with the one cup of milk in a small bowl. Refrigerate until ready to use.
  8. In mixing bowl, beat cream cheese and confectioners’ sugar together.
  9. Fold in one cup of the Cool Whip.
  10. Spread cream cheese mixture over the cooled crust.
  11. Spread pudding over the cream cheese layer.
  12. Spread remaining Cool Whip over the pudding layer.
  13. Refrigerate two hours.
  14. Eat 4 of the wonderful cookies while you're waiting.
  15. In a plastic bag, break up the 14 remaining cookies. Sprinkle over the top just before serving.

Notes

Be sure to put the larger crumbled cookies on top before serving and not before refrigerating for the two hours. They will soften and nobody likes them soft.

I rate everything on a scale of 1-4 with 4 being the best and these Dream Bars earned 3 1/2 rolling pins.
They were really good.
I didn’t even know that this pudding existed until I saw it at the store and then decided to make this wonderful creation.
Although I’m sure it’s been made somewhere on the internet.
Hasn’t everything?

Looks yummy! I also love the idea of your blog… I am a sucker for challenges, and committing to baking everyday for a year sounds like a good one. Keep up the good work :)

      Thanks, Liz!
It has been a challenge this second go-round doing it all while working part-time, so had to stop. I do believe I’ll attempt it again once I can be at home full-time.

What a wonderful site- don’t even know how I found it, but while the blood sugar killer caught my eye- your other recipes look so much better for me. Thank you for your service. Trish

    • Lynne says

LOL! Thank you, Trish. Not everything I post will send your blood sugar skyrocketing – hope you find something you enjoy! I appreciate your support!

      Katie,
the crust may be too thin in a 9 X 13-inch pan. I originally made them in the larger pan and used one whole package for the crust, but I thought that was too thick. I think if you’re going to go larger pan, use 3/4 of the package and you should be fine.
Besides, you can always eat any leftover Oreos, right? ;-)

    • Lynne says

Yes, Tami, you could double it and use a 9 X 13-inch pan. However, use just one package of Oreos for the crust and you may not use the whole second package for the topping as it may be too many cookies. You can judge for yourself. Heck, maybe you will want to use them all (I think I might! ;-) ).

    • Lynne says

Bina, you could use a caramel pudding, but I’d suggest using a chocolate or vanilla with the Oreos instead. Not sure how the caramel would taste with them.

    • Lynne says

Deb, thanks for asking. That would be the 4.2 ounce as that is the only size it comes in. I’ve corrected the recipe to reflect that.

    Hi

I have made this before and it was a hit! I plan on taking it to work tomorrow but was wondering if it would taste the same if I were to refrigerate it overnight and put the oreos on the top before serving?

    Thank you!

    • Lynne says

Thanks so much for letting me know, Jessica!
I think that would be fine. Just make sure you cover the dish with plastic wrap so that the Cool Whip doesn’t harden and definitely put the Oreos on before serving, otherwise they’ll get soft and I don’t know many people who like soft Oreos! :-)
