Hi Andi, thank you! I hope you enjoy them! The recipe will make 12 filled crepes. The amount is to the right of the description in the recipe card in green. It&#039;s kind of tough to see, sorry about that. 
If using ricotta, I would still suggest draining it as it does have quite a bit of moisture though not as much as cottage cheese, and it could change the outcome if you don&#039;t. I would also still allow it to drain for the 3 hours as directed. 
Please come back and tell me how they were with the ricotta. I haven&#039;t made them that way, so am curious to hear what you think, and you&#039;ll be helping others who may want to do the same.

It&#039;s most likely due to them being over baked which would have caused the moisture in them to evaporate. Even if they were only baked for the required amount of time, your oven temperature could be higher than expected which would have caused it. I recommend getting an oven thermometer, if you don&#039;t already have one. I&#039;ve had to purchase one and then adjust either the oven temperature and/or baking time. If it isn&#039;t the oven temperature, they could have been over mixed. 
I&#039;d love to hear your thoughts as it might also help someone who&#039;s having the same issue.]]></description>
