Crockpot Spare Ribs - an easy meaty dinner with carrots and potatoes covered in a tangy sauce. This tender, hearty meal is perfect when you don't want to turn on the oven in the summer or want comfort food in the winter.

Ingredients
3 lbs.boneless spare ribsbeef or pork
2tablespoonschopped onion
6tablespoonslemon juice
3tablespoonswhite vinegar
1tablespoonWorcestershire sauce
3tablespoonlight brown sugar
6tablespoonswater
12ouncesHeinze chili sauce
1teaspoonsalt
½teaspoonfreshly ground pepper
4-6carrots
5-7 mediumpotatoes
Instructions
Turn crockpot onto low, and cut the ribs into single servings.
Prepare a large skillet by coating it with cooking spray. Place ribs in the skillet over medium high heat and sear on all sides.
Peel potatoes and carrots. Cut them into thirds, then halves. Place half of potatoes and carrots in the bottom of the crockpot.
Place the browned spare ribs on top in a single layer if possible. Cover with the remaining carrots and potatoes.
In a blender, combine onion, lemon juice, vinegar, Worcestershire sauce, brown sugar, and chili sauce.
Blend on high until all ingredients are mixed well. Evenly distribute the sauce over the carrots and potatoes.
Cook until meat is fork tender and shreds easily- low for 8-10 hours, or high for 4-6 hours Stir occasionally while cooking. This dish tastes best when everything is mixed together.
Notes
If you prefer to buy bone-in ribs, purchase 4.5 lbs. to make this recipe, and you may need to use the least amount of vegetables called for.
