Hi Ruth,
I follow a keto diet myself and have changed some of these great recipes (thank you, Lynne and my own dessert lasagnes)
You can buy keto friendly cookies, like Choczero chocolate or vanilla creme cookies.. they&#039;re like an oreo or vanilla sandwich cookie.  Change the pudding to sugar free.  Either use sugar free cool whip or make the stabilized whipping cream and a sugar substitute.  
Hope that helps a little.  Has saved me many a time with my chocolate sweet tooth!  Good luck!

I wish I hadn&#039;t put it in the freezer... the pudding layer stayed way too frozen for too long while the other layerswere soft. I had moved it to the fridge 3 hours before we ate it. 
The strawberry layer, I pulsed in food processor because we didn&#039;t want big chunks and gel. We like it better slightly pureed. This time, the strawberry layer was bland... but I think it&#039;s because I used the Walmart brand... meh.
It says 8x8, I used 9x9 and it was very full! I recommend you use a deep pan!

*update... after storing it in the fridge overnight, I like it a lot better!  But I still won&#039;t buy the Walmart brand of strawberry pie filling again.]]></description>
