Ingredients
3cupsall-purpose flour
1 ½cupsgranulated sugar
½cupunsalted butter,cold, cubed
1teaspoonsalt(omit if using salted butter)
2large eggs
2poundsstrawberries,sliced
½lemon,juiced
1tablespooncornstarch
½cupstrawberry jelly
Instructions
Preheat the oven to 350°F and line a 9 x 13-inch baking pan with parchment paper.
Combine the all-purpose flour, sugar, butter, and salt in a large mixing bowl. Pinch the butter into the flour mixture until small pieces of dough form. Mix in the eggs. Press 2/3 of the mixture into the bottom of the baking pan in an even layer.
In a medium mixing bowl, stir together the strawberries, lemon juice, and cornstarch. Mix in the strawberry jelly and pour over the crust in an even layer. Top the strawberry mixture with the remaining crumb topping.
Bake for 45 to 45 minutes until the bars are golden brown. Allow the bars to cool completely and cut into squares.
