Preheat oven to 400 degrees F. and prepare a baking sheet by lining it with parchment.
In a small bowl, beat egg and add the tablespoon of water to make an egg wash.
Roll the pastry dough out so that it measures 10 X 10-inches square. Using a pizza cutter, cut the sheet into 12 squares that measure 2 1/2 X 2 1/2-inches.
Take one of the pastry squares and brush a small amount of egg wash on one end.
Place a sausage link at the opposite edge.
Put one tablespoon of cheese next to the sausage and as close to it as possible.
Holding the dough close to the sausage link and tucking in the cheese as you go, roll down towards the egg wash and press tightly to seal.
Place on prepared baking sheet.
Brush the top with some of the egg wash, and sprinkle with some more cheese and chives.
Bake for 15 minutes.
