1cupcottage cheese
1cupshredded Pepper Jack cheese
1tablespoontaco seasoning
Fresh jalapenos and cilantro for garnish,optional
Instructions
Add the cottage cheese to a blender or food processor and blend until completely smooth (30 seconds to a minute). You're aiming for a silky, smooth texture that resembles sour cream.
Pour the blended mixture into a microwave-safe bowl. Stir in the Pepper Jack cheese and the taco seasoning.
Microwave in 30-second intervals, stirring in between. Do this until the cheese is fully melted and everything is smooth and combined, about 1 1/2-2 minutes.
Top with fresh cilantro, jalapeno slices, or a sprinkle of smoked paprika. Serve warm with tortilla chips or sliced veggies.
