Ingredients
1cupcottage cheese
⅓cup Buffalo sauce
1-2 teaspoonswateronly if needed
1cupshredded cooked chickenI use a rotisserie chicken
1cupfreshly grated Pepper Jack cheese
½teaspoongarlic powder
½teaspoonOld Bay seasoning
⅓cup freshly shredded cheddar cheese
2chopped green onionsfor garnish
Instructions
Preheat oven to 350°F, and prepare a 9-inch pie plate or 1 1/2 qt. baking dish by spraying it with cooking spray.
Using an immersion blender or a regular blender, combine the 1 cup of cottage cheese with the 1/3 cup Buffalo sauce, and blend until smooth. I find it easiest to use my immersion blender, but if using a regular blender, you may need to add a teaspoon or two of water to make sure it blends smoothly.
Pour the contents into a large bowl, and add the 1 cup shredded chicken, 1 cup Pepper Jack cheese, 1/2 teaspoon garlic powder, 1/2 teaspoon Old Bay seasoning. Mix well so that everything is combined.
Spread contents into the prepared baking dish. Bake for 20 minutes. Top with chopped green onions before serving.
Notes
If you don't mind the consistency of the cottage cheese or want to save time, you can mix the cottage cheese with the other ingredients without smoothing. However there may still be some lumps present after it's been baked.
I highly recommend using freshly grated pepper jack and cheddar cheeses for this recipe as they will melt better than the packaged shredded cheeses.
