Ingredients
14ouncescoleslaw mix
1cupshredded chickenI use rotisserie
1yellow peppercored, seeded, and sliced thin
15ounces mandarin oranges,drained
¼cupsliced almonds
¼cuppickled red onions
¼cup chopped green onions
2tablespoonsfreshly chopped parsley
1instant ramen packet, do not use the flavor packet
Sesame Ginger Dressing
3tablespoonsrice wine vinegar
2tablespoonshoney
2tablespoonslow sodium soy sauce
1tablespoonsesame oil
1teaspoonfreshly minced ginger
1 cloveminced garlic
¼teaspoonchili pastecan substitute red pepper flakes, and add more or less to taste.
¼cupolive oil
Instructions
In a large bowl, place the 14 ounces coleslaw mix, 2 cups shredded chicken, sliced yellow pepper, 15 ounces drained mandarin orange slices, ⅓ cup sliced almonds, 1/3 cup pickled red onions, 1/3 cup green onions, 2 tablespoons chopped fresh parsley. Gently crush the ramen noodles to the desired size over the bowl. Gently mix all ingredients together.
Sesame Ginger Dressing
In a small bowl, whisk together the 3 tablespoons rice wine vinegar, 2 tablespoons honey, 2 tablespoons low sodium soy sauce, 1 tablespoon sesame oil, 1 teaspoon freshly minced ginger, 1 clove minced garlic, and ¼ teaspoon chili paste. While whisking continuously, slowly pour in the olive oil and mix until completely blended.
Pour over salad just before ready to serve and gently toss everything to coat.
