These Chicken Stuffed Shells are filled with shredded chicken, three kinds of cheese, and topped with pasta sauce. Ready in about an hour, these stuffed pasta shells will quickly become a family favorite!

Ingredients
20jumbo pasta shells6 ounces
24ouncespasta sauce
1 ¼cupsshredded cooked chickenI use rotisserie
1 ¼cupsricotta cheese
2cupsshredded mozzarelladivided
½cupgrated Parmesan cheese
1largeegg
2tablespoonsdried parsley
¾teaspoonkosher salt
½teapoonpepper
Instructions
Preheat oven to 350 degrees F. Prepare a 9 X 13-inch baking dish by spraying it with cooking spray, and then spread ⅓ of the pasta sauce into the bottom.
Cook pasta shells to al dente according to package directions.
In a large mixing bowl, beat the egg. Add the chicken, ricotta cheese, 1 cup of the mozzarella, Parmesan cheese, parsley, salt, and pepper. Mix well.
Fill each shell with the filling and place into the baking dish.
Pour remaining pasta sauce over the shells and cover the pan with tin foil.
Bake for 30 minutes.
Remove tin foil and sprinkle the remaining 1 cup of mozzarella over the shells. Return to oven to bake uncovered for another 5 - 10 minutes or until cheese is melted.
Notes
You can enjoy this dish with fewer calories, but with additional protein if you substitute a low-fat cottage cheese for the ricotta! Substitute it in a 1:1 ratio, using the same amount of ricotta called for. Leave the texture as it is or put the cottage cheese into a blender or food processor before mixing it with the rest of the ingredients.
