Nothing says summer quite like these sweet Blueberry Bars! Made with fresh blueberries and covered in a butter crumb topping, these blueberry bars are the perfect dessert for summer gatherings and BBQs.

Ingredients
1 ½cupsall-purpose flour
¾cupsgranulated sugar
¼cupunsalted butter,cold, cubed
½teaspoonsalt(omit if using salted butter)
1large egg
16ouncesfresh blueberries
1tablespoonfresh lemon juice
1 ½teaspoonscornstarch
¼cupblueberry jam
Instructions
Preheat the oven to 350°F and line an 8 X 8-inch baking pan with parchment paper.
Combine the all-purpose flour, sugar, butter, and salt in a large mixing bowl. Pinch the butter into the flour mixture until small pieces of dough form. Mix in the eggs. Press 2/3 of the mixture into the bottom of the baking pan in an even layer.
In a medium mixing bowl, stir together the blueberries, lemon juice, and cornstarch. Mix in the blueberry jam and pour over the crust in an even layer. Top the blueberry mixture with the remaining crumb topping.
Bake for 40 to 45 minutes until the bars are golden brown. Allow the bars to cool completely and cut into squares.
