Ingredients
½cupunsalted butter
1cupmashed bananaabout 2 medium bananas
1 ½ cupspacked light brown sugar
1large egg
2teaspoonspure vanilla extract
2cups all-purpose flour
¾teaspoonkosher salt
¼teaspoon baking powder
¾cupsemi-sweet chocolate chipsdivided
½cupchopped walnutsdivided and optional
Instructions
Preheat the oven to 325°F, and prepare a 9 x 9-inch baking pan by spraying it lightly with cooking spray or lining it with a piece of parchment.
In a large bowl, melt the butter in the microwave for 45-60 seconds. Add the mashed banana, brown sugar, egg and vanilla extract. Stir together until everything is combined.
Whisk together the flour, baking powder, and salt. Add to the banana mixture, and stir until everything is combined.
Fold in three quarters of the chocolate chips (and same amount of walnuts, if using). Pour the batter into the prepared baking pan, and smooth it out to the edges. Sprinkle the remaining chocolate chips and walnuts on top of the dough.
Bake for 40-45 minutes or until a toothpick inserted into the center comes out clean.
