Dressing
⅓cupvinaigrette dressing
⅓cupsliced green onions
2tablespoonschopped fresh cilantro
zestfrom 1 lime
Salsa
2avocadospeeled, pitted, and diced
14.5ouncesblack beansdrained and rinsed
1 ½cupsthawed frozen cornor can use fresh
1red pepperdiced
juice from zested lime
salt to taste
Instructions
In a large mixing bowl, combine the ingredients for the dressing - the vinaigrette, green onions, cilantro and lime zest. Mix well.
Add the avocados, beans, corn, and red pepper to the bowl. Add the lime juice and mix completely. Add salt to taste.
Notes
This recipe should be served immediately after making it so that the avocados stay fresh and green. If left to sit for long or refrigerated overnight, oxidation will occur and the avocados will brown, but it will still be edible within 24 hours.
