Ingredients
  • 3 eggs room temperature
  • ½ cup milk
  • ½ teaspoon pure vanilla extract
  • ½ cup flour
  • 1 teaspoon sugar
  • ½ teaspoon salt
  • 2 tablespoons unsalted butter melted
  • 1 ½ teaspoons poppy seeds
  • 1 teaspoon fresh lemon zest
  • 2 tablespoons fresh lemon juice
  • confectioners’ sugar
  • fresh fruit if desired
Instructions
  1. Preheat oven to 425 degrees F.
  2. Prepare a 10-inch oven proof skillet by greasing it with butter.
  3. In a medium bowl, beat the eggs. Add the milk and vanilla extract and mix well.
  4. Onto a square of wax paper, sift the flour, sugar and salt.
  5. Make a small well in the center of the flour and add the poppy seeds and lemon zest.
  6. While whisking, slowly pour the flour into the bowl, by folding the edges of the wax paper together. Mix until fully incorporated.
  7. Pour batter into prepared skillet and bake for 15 minutes.
  8. Reduce oven temperature to 350 degrees and bake for an additional 10 minutes when puffed, golden and set in the middle.
  9. Remove from oven sprinkle the top with lemon juice and confectioners’ sugar.
  10. Serve with fresh fruit, if desired.
