Double Peanut Butter Oatmeal Chocolate Chip Cookies

  • 1/2 cup 1 stick butter, at room temperature
  • 1/2 cup super chunky with peanuts peanut butter
  • 1/2 cup sugar
  • 1/3 cup dark brown sugar
  • 1/2 teaspoon vanilla
  • 1 egg
  • 1 cup flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup rolled oats
  • 1/2 cup peanut butter chips
  • 1/2 cup semi-sweet chocolate chips
  1. Preheat oven to 350 degrees F.
  2. Prepare a cookie sheet by lining it with parchment.
  3. In the bowl of a mixer, cream together the butter, peanut butter, both sugars and vanilla.
  4. Add the egg and incorporate fully.
  5. In a small bowl, whisk together the flour, baking soda and salt.
  6. Gradually add the flour mixture on low speed and mix until just combined.
  7. Mix in the oats and then both the peanut butter and chocolate chips.
  8. Using a flattened tablespoon of dough, place about 2 inches apart onto the prepared baking sheet.
  9. Bake for 10 - 12 minutes, until lightly golden.
