These Double Peanut Butter Oatmeal Chocolate Chip Cookies are bursting with peanut butter flavor and just a hint of chocolate. The perfect midnight snack!

Ingredients
½cup1 stick butter, at room temperature
½cupsuper chunkywith peanuts peanut butter
½cupsugar
⅓cupdark brown sugar
½teaspoonvanilla
1egg
1cupflour
1teaspoonbaking soda
¼teaspoonsalt
½cuprolled oats
½cuppeanut butter chips
½cupsemi-sweet chocolate chips
Instructions
Preheat oven to 350 degrees F.
Prepare a cookie sheet by lining it with parchment.
In the bowl of a mixer, cream together the butter, peanut butter, both sugars and vanilla.
Add the egg and incorporate fully.
In a small bowl, whisk together the flour, baking soda and salt.
Gradually add the flour mixture on low speed and mix until just combined.
Mix in the oats and then both the peanut butter and chocolate chips.
Using a flattened tablespoon of dough, place about 2 inches apart onto the prepared baking sheet.
Bake for 10 - 12 minutes, until lightly golden.
