Day 164 – Snickerdoodle Bars

  • 2-2/3 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/4 teaspoon freshly ground nutmeg
  • 2 cups packed brown sugar
  • 1 cup 2 sticks unsalted butter, room temperature
  • 2 eggs
  • 1 tablespoon vanilla extract
  • 2 tablespoons granulated sugar
  • 1 teaspoon cinnamon
  1. Preheat oven to 350 degrees F and prepare a 9 X 13-inch baking dish by spraying it lightly with cooking spray.
  2. In a mixing bowl, cream the butter and brown sugar on medium speed until light and fluffy. It should take about 5 minutes.
  3. In a medium bowl, whisk together the flour, baking powder, salt, cinnamon and nutmeg.
  4. individually add the eggs until well mixed. Pour in the vanilla. Be sure to scrape down the sides of the mixing bowl before going on.
  5. With the mixer on low, gradually add the flour mixture until just combined.
  6. Scrape the sides of the bowl and make sure that all of the flour has been mixed in on the bottom.
  7. Put dough into prepared baking dish and with an offset spatula, spread evenly.
  8. In a small bowl, mix granulated sugar and cinnamon. Sprinkle it evenly over the top.
  9. Bake for 25-30 minutes or until surface springs back when touched lightly.
  10. Cool completely before cutting.
