Ingredients
Ranch Fried Green Tomatoes
Canola oil
2lbs.firm green tomatoes
salt
pepper
2eggs
1cupyellow corn meal
1packet Hidden Valley Ranch Greek Yogurt Salad Dressing Mix
½teaspoonpaprika
Chili Ranch Dipping Sauce
1 ½cups2% cottage cheese
½teaspoonchili pastemore if you like an extra kick
¼cupmilk
1packet Hidden Valley Greek Yogurt Dips Ranch Mix
Instructions
Ranch Fried Green Tomatoes
In a deep fryer or large deep skillet, heat canola about 2 inches to (375 degrees F.)
Slice tomatoes into 1/8 – 1/4 inch slices.
Lightly sprinkle each slice with some salt and pepper.
In a medium bowl, beat eggs.
In a shallow dish, combine corn meal, packet of Salad Dressing Mix and paprika.
Dip one tomato slice in the egg being sure to coat both sides.
Then place the sliced tomato into the corn meal mixture, coating completely and lightly shake off excess.
Place into the heated oil and fry for approximately two minutes until lightly golden.
Be sure to only cook a few slices at a time, so as not to crowd them.
Drain on paper towels.
Chili Ranch Dipping Sauce
Combine the cottage cheese, chili paste, milk and Hidden Valley Greek Yogurt Dips Ranch Mix in a blender and mix until no lumps remain and mixture is smooth. If necessary, turn blender of to combine ingredients and stir with a spoon before blending again.
An immersion blender will also work well for this.
