Dairy-Free Lemon Poppy Seed Waffles

Ingredients
  • 3/4 cup all-purpose flour
  • 1/4 cup cornstarch
  • 1 tablespoon poppy seeds
  • 1 1/2 teaspoons sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • zest from one lemon
  • 1 egg beaten
  • 1 cup Silk Soy Milk
  • 1/3 cup canola oil
  • 2 teaspoons fresh lemon juice
  • 1 teaspoon vanilla extract
Instructions
  1. Whisk together in a medium bowl the flour, cornstarch, poppy seeds, sugar, baking powder, baking soda, salt and lemon zest.
  2. In a separate bowl, whisk together the egg, soy milk, canola oil, egg, sugar, lemon juice and vanilla and mix well.
  3. Add the wet ingredients and allow the batter sit for 30 minutes before proceeding.
  4. Preheat the waffle iron and make waffles according to manufacturer's directions.
