When you want something sweet but not overly sugary, try this spiced Applesauce Cake! Enjoy this fluffy, airy cake spiced with cinnamon and nutmeg and made moist with the addition of applesauce. Frost if desired, but it's perfectly delicious just as it is!

Ingredients
8tablespoonsunsalted butter
1cupsugar
1cupregular applesauce*NOTE
2largeeggs
2cupsall-purpose flour
1 ½teaspoonsbaking soda
½teaspoonkosher salt
2teaspoonscinnamon
½teaspoonfreshly grated nutmeg
½cupraisinsoptional
½cupchopped walnutsoptional
Instructions
Preheat oven to 350 degrees F.
Prepare a 9 X 13-inch baking dish by spraying it with cooking spray and flouring it or use a baker’s spray.
In a mixer fitted with the paddle attachment, cream the butter. Gradually add the sugar and beat well.
Add the applesauce and mix thoroughly.
Blend in the eggs.
In a small bowl, whisk together flour, baking soda, salt, cinnamon and nutmeg.
Add to the butter mixture and beat until just blended.
Spread into pan.
Bake for 25 - 35 minutes or until a toothpick inserted in the middle comes out clean.
Notes
Makes one 9 X 13-inch or two 8-inch rounds. *If using two 8-inch round pans, bake for 25 – 30 minutes. Test for doneness by placing a toothpick in middle to see if it comes out clean. Allow the cake(s) to cool in the pan before turning it out onto a wire rack.
Consider adding raisins and/or walnuts for some texture. Nutritional information has been calculated without them.
Frost with a cream cheese frosting, if desired or plain fresh whipped cream.
