Christine, I personally prefer the difference in texture with the Russet being fluffier when mashed and the Yukon adds a creamier texture and a natural buttery flavor. Plus, I like the contrast of the Yukon’s skin when serving. You can use either or go with the combo as stated in the recipe. Enjoy!
