Definitely a boozy cake, but if you like rum cake it’s really good. I made it in a 9×13 pan instead of a bundt pan so I only made half the syrup recipe and poked the cake full of holes and covered it in syrup. My husband likes frosting so made a cream cheese frosting for the top and covered that with toasted coconut. I can’t figure out how to leave a picture, but it turned out really nice.

This cake is fantastic!!!! I made this recipe a few years ago and then lost the recipe. I looked at all the recipes and none sounded like the one I made before until I was reading your story about the cruise and I remembered that story was the cake I made, so I’m glad you put that story in!! And I remember the pineapple tidbits which were not in other recipes. I am so relieved to finally find this recipe and am making the cake this week. Thank you soooo much for this wonderful recipe!

This cake is absolutely delicious. I’ve made it several times and shared it with neighbors. I took it to a New Year’s family dinner gathering and none was left. Everyone loves it. Thanks for sharing. 👍🏽

Wonderful. The whole family loved this. Especially liked the tip about coating the pineapple tidbits in the dry mix. Got a taste of pineapple in every bite!
