					<description><![CDATA[I have never eaten or cooked eggplant in my life so this was about to be an experience both in cooking and in trying eggplant. The recipe was extremely easy to follow and I had no issues. The only substitutions that I made were the following: I didn’t have any Italian bread crumbs so I used my bag of homemade breadcrumbs and added some Italian seasoning to it, worked perfectly. I also did not have enough mozzarella cheese but that wasn’t an issue as I just added extra grated parmesan cheese.

I would say that if you are ever going to fry anything don’t wear shorts, my mistake I know I should have been wearing my apron as well. Needless to say when I was frying the eggplant prior to baking I may have given myself some minor burns :-P. In the end it came out of the oven looking and smelling amazing. My first ever taste of eggplant and I was not disappointed. I had read a few places that eggplant can taste bitter and some people suggest soaking in milk first. I personally did not receive a bitter instead a wonderful zesty and flavorful taste that married with the cheese and sauce well. So if it were my novice opinion I would say since I did not soak my eggplant I would skip this step.

Overall this was an instant hit with me and I definitely will be making it again. One might dare to say that it has made me an eggplant fan!]]></description>
