Nancy, I would freeze them before adding the chocolate. Place one layer of the cookies in the bottom of an airtight container. Then layer the cookies with sheets of wax paper or parchment, in between as high as will fit (but make sure that you rest nothing on top of the container in your freezer). To defrost, I would set them in the refrigerator overnight and then allow them to come to room temperature for about 15 minutes on the kitchen counter before adding the chocolate.
