Susan, thank you! I appreciate the feedback, and thanks SO much for the note about the eggs. WHOOPS! I've edited the recipe to reflect that the eggs are to be added along with the chicken, pineapple and green onions in the 4th step.

I cooked this in my Wok and it completely filled the pan! Next time I’ll halve the recipe. Also the directions do not tell you when to add the eggs to the mixture?!

Viane, ahhhh, LOL, me too!! Thank you SO much for bringing that to my attention! I have edited the recipe to reflect the 8 tablespoons in both the ingredients and instructions. I do like to use a bit more butter, so that's probably why I had a total of 10 in the recipe, but you can definitely get by with just the 8. Hope you enjoy it and sorry for the confusion!

Dora, I am not a big fan of any fish or oyster sauce, but I have to say that you can't even detect it in this recipe. It really just adds to the flavor profile giving it more of a savory taste. You can leave it out if you'd like, or use less than the amount I recommend, but as I said, your fried rice will not taste anything like oysters.
