Ah, Judy I've heard about those, but have yet to try them. I think I'll have to do that this year with my daughters over the holidays!

Hello fellow Girl Scout, Louise!! When I sold them, I remember them being $1.25 and there were A LOT more cookies in the box! Everything's gotten smaller in quantity yet goes up in price. :-(
Enjoy making them at home!

Gail, you could try using gluten free flowers. I'm not sure how each cookie would turn out though as I haven't made them that way. You might be able to do a Google search and find that there's a gluten-free version.

I used to sell girl scout cookies, including the thin mints, for .50 cents per box, in the late fifties, early sixties. Not only r they expensive, not the dont even taste the same. I believe these r going to be very popular with my recipients. And, oh so easy!

In reply to Ugly, Fat and Crabby.

Ugly, Fat, and Crabby, (I love the name by the way)
thank you so much for your well wishes for my friend's daughter and also for your comment. I initially questioned the use of cornstarch in the recipe, but neglected to contact Nicole of Baking Bites thinking that it was the ingredient that would harden the cookie and give it its' crunch. I looked on the Joy of Baking substitution page and saw that you can use 2 tablespoons of all-purpose flour for 1 tablespoon of corn starch, so you would use an additional 1/2 cup of flour besides what I have listed here. You can also use potato starch and arrowroot in place of it, just check the page for the needed amounts.
Here is the link to that Joy of Baking page: http://joyofbaking.mobi/IngredientSubstitution.html
Any questions, don't hesitate to contact me again!

The homemade Thin Mints look great! Couple of questions, though -- what does the cornstarch do for this recipe and what can I substitute for it? (We have someone in the family with an allergy to corn.) Hope your friend's daughter is home and safe soon.
