In reply to jaris. Jaris, you can certainly try replacing the coconut. Not sure if the cookie will remain as chewy though. Give it a try and let me know how it goes!

Hi, thank you very much for sharing.
I love anything with lime and chewy.. However, coconut is a little off for me, do you think we can reply coconut by anything? Like cashew nuts or anything that can goes well with lime?

My daughter, who sits beside me drinking her morning bottle while I blog in the morning, was VERY happy about Kermit! Thank you for sharing.

I hope years from now, I can stand in a flood of water and look at my absent minded daughter, she already is taking after me there, and say "don't worry, I will clean it up". : )

The cookies look and sound delightful!
