Janet, though I haven&#039;t cooked this recipe in the oven, my recommendation would be to do the following. 
Sear the pork loin as directed. 
Preheat your oven to 325°F. 
Put the ingredients (but NOT the noodles), into a 9 X 13-inch baking dish, and mix well so that they are combined. 
Place the seared pork loin into the tomato mixture and spoon some over the top so that it is covered. 
Cover the baking dish with a sheet of tin foil and cook for 2 hours. Test the meat by putting a meat thermometer into the thickest part, away from the bone and it will be done when the internal temperature reaches 145°F. If the meat is still not cooked at the end of the cooking time, add more time in 15-minute increments until the meat is thoroughly cooked. 
Shred the meat, return it to the baking dish, mixing it with the sauce, and place it back into the oven for an additional 15 minutes.
