Trina, you can do that. Cooking the sun dried tomatoes beforehand is to soften them up a bit. If they&#039;re added after the chicken is cooked, there is a chance that the chicken will be overcooked. You can give it a try and cook the chicken before adding the tomatoes, and if you do, let me know what you think!]]></description>

I would recommend asparagus. I&#039;ve had a few people tell me they&#039;ve substituted the tomatoes for that and really liked it. Or maybe some red bell pepper.
