Eric, you should be able to make the coffee cake into muffins without a problem. My suggestions (are based off of Google, and I haven&#039;t personally tried) would be to use muffin or cupcake liners, and fill each muffin cup only about 2/3 full so that there&#039;s no overflow. Increase the oven temperature to 375°F, and bake for 15-20 minutes as muffins need a higher temp and shorter amount of time to bake. You could have between 12-16 muffins.
If you do make the cake into muffins, please come back and leave a comment as I&#039;d love to hear the outcome and others may want to do the same.]]></description>
