					<description><![CDATA[I am Greek and Avgolemono soup is a must in our family. IAvgolemono in Greek means the combination of eggs with lemon. Avgo=egg and lemoni=lemon. The difference in your recipe with ours apart from the substitution of orzo to rice, is that we never separate the eggs. We beat the eggs as a whole for quite some time with an electric mixer until they become whitish and then we turn off the mixer and we slowly add the lemon while stirring with a spoon. The tricky part is when you combine the avgolemono with the hot soup, not to cook the eggs. We pour one by one a ladle spoon of hot spoon into the avgolemono while we stir fast manually the mixture to avoid this overcooking.  I highly recommend this soup and I can also suggest that you may substitute the chicken with meatballs.]]></description>

You&#039;ve made me smile about the photos because at this point I&#039;m aggravated that my Nikon D40 is in the shop and I&#039;m not able to make the kind of pictures I&#039;d like.  &lt;br /&gt;I will definitely be by to check out that recipe ~ have never had chicken gumbo!]]></description>
