I love recipes that can be easily modified.

I cut the amount of sugar to 1/2 cup and chose brown sugar. I also added 1 cup of oats finely ground into powder and added an extra egg.

The result, a low sugar peanut butter cookie that's not dry or crumble and more nutritious with the added oats and more protein with the added egg.

I should have read the comments before making these: Then I would have found a different recipe. The substitute sweetener is disproportionate.
I substituted Sweet N Low. It completely overwhelmed the peanut butter flavor along with leaving the characteristic bitter aftertaste. A 1/2-3/4 cup would probably be more proportional.
Since stevia has a slightly higher sweetness factor than Sweet N Low, I’d be tempted to use 1/3-1/2 cup.

These are easy to make and are great for diabetics. The description says they are “not soft and chew”! They are VERY soft and easy to chew. Just what I want for my elderly nearly toothless diabetic relative. (I am assuming the description was a mistake). I used allulose (for the first time) as a sweetener and a full cup. My husband ( a sugar addict) hated them. But I love them. It’s a great quick protein boost and good for elderly who may not eat very well.

The flavor was very good however, they were like a packed sandcastle,. When you went to grab one it just turned to powder on your fingers if you weren't super super careful. I let them completely cool like instructed but that didn't make a difference. Any ideas would be welcome.
