This Patriotic Poke Cake made with white cake mix, blue gelatin, Lucky Leaf Premium Cherry Fruit Filling or Topping and whipped topping is the perfect red, white, and blue dessert for your Memorial Day celebration. It's fun, festive and delicious, and a great cake recipe to make with the kids!

Ingredients
15.25ounces white cake mix
1cupwater
3large egg whites
⅓cupvegetable oil
3ouncesBerry Blue gelatinyou can also use blue raspberry jello
1cup boiling water
42ouncesLucky Leaf Premium Cherry Fruit Filling or Topping(2 cans)
8ouncesWhipped Topping

Instructions
Preheat oven to 350°F for a metal or glass pan or 325° for dark or coated pans. Prepare your 9 X 13-inch baking dish by spraying it with cooking spray.
In a mixing bowl, combine the cake mix, 1 cup water, egg whites, and vegetable oil. Mix on low until moistened, and then beat at medium speed for 2 minutes.
Pour batter into pan and bake for 23-28 minutes or until a toothpick inserted into the middle comes out clean. Place cake on a wire rack to cool for at least 20 minutes.
With the rounded handle of a wooden spoon, poke holes halfway into the cake about 1-inch apart.
Combine the cup of boiling water and gelatin. Spoon evenly over the entire cake. Place into the refrigerator to chill for at least two hours.
Cover the cake with the two cans of Lucky Leaf Premium Cherry Fruit Filling or Topping, spreading evenly. Place dollops of whipped topping onto the cherry topping, and spread. Refrigerate for one hour.
Sprinkle the cake with red, white, and blue sprinkles and serve.
