This Pesto Chicken Pasta Salad has campanelle pasta, diced chicken, fresh tomatoes and diced mozzarella tossed in an easy pesto. Serve it as a main dish or on the side without the chicken.

Ingredients
Pesto
3cupsfresh basil
½cupwalnutschopped
5clovesgarlicminced
¾cupRomano cheese
¾cupolive oil
Pasta Salad
1 16-ouncepackage campanelle pastaor your favorite
3cupsseasoned and cooked chicken breastscut into bite-sized pieces
1 10.5-ouncepackage red tomatoes
1 10.5ouncepackage yellow tomatoes
2 8-ounceballs fresh mozzarella or pearl mozzarellacut into 1-inch pieces
Additional fresh basil
Instructions
Cook pasta according to manufacturer's directions.
Pesto
Combine the basil, walnuts, and garlic in a food processor or blender and pulse 5-7 times.
Slowly drizzle in the olive oil while the machine is still running.
Scrape down the sides of the blender or processor and add the cheese. Mix a few more time by pulsing to completely blend.
Pasta Salad
In a large bowl, combine the pasta, chicken, tomatoes, and mozzarella.
Pour the pesto over the bowl contents and toss gently to completely coat.
Serve with additional fresh basil, if desired.
