Tex-Mex Pasta Salad

Ingredients

lb.
pasta - cooked according to package directions

½
red onion
diced
▢
½
bell pepper
diced
▢
1
large tomato
diced
▢
½
cup
frozen corn
▢
1
avocado
diced
▢
½
cup
cilantro
chopped
Dressing
▢
2
Tbs.
olive oil
▢
2
Tbs.
vinegar
▢
¼
tsp.
cumin
▢
juice from 1/2 a lime
▢
⅛
tsp.
chili powder
▢
½
tsp.
sugar
▢
salt and pepper to taste
Instructions
Mix the dressing ingredients together and set in fridge until ready to use.
Cook the pasta, then prep the fruits and veggies by dicing or chopping as needed.
Drain the pasta and rinse with cold water until the pasta is cooled.
Toss the pasta with all the ingredients and the dressing.
Chill in fridge until ready to serve.
