If you love Chocolate Covered Cherries, then you're going to love how easy they are to make at home without any corn syrup. With just maraschino cherries, chocolate chips, and coconut oil, you can enjoy them whenever you have a chocolate craving, give them as gifts for a special occasion, share them with your sweetheart on Valentine's day, and / or use them to decorate desserts.

Ingredients
12 long stem maraschino cherries
½cupsemi-sweet chocolate chips
1teaspoon refined coconut oil
Instructions
Cover a plate with a piece of parchment paper.
Place two paper towels on a plate, and remove the cherries from the jar. Allow them to drain for at least 15 minutes before continuing. After the 15 minutes, it may be necessary to gently blot each of them with a dry paper towel to make sure they are completely dried off and will not be leaking any juice into the chocolate.
Combine the chocolate chips and coconut oil into a small microwavable safe bowl. Melt for 30 seconds. Stir well. If needed, reheat for 10 seconds at a time, stirring in between each time, until chocolate is melted and completely smooth.
Holding a cherry by the stem, gently dip into the chocolate, spinning slowly to coat all sides and top. Remove and place onto the plate lined with parchment.
Place the plate of dipped cherries into the refrigerator to set for at least an hour before serving or using.
Notes
You can also use the same amount of vegetable oil in place of the coconut oil, if you'd like.
