Oatmeal Butterscotch Cookies
These Oatmeal Butterscotch Cookies are your all-time favorite oatmeal cookie made even better and sweeter with the addition of butterscotch chips.

Ingredients
  • 8 tablespoons unsalted butter room temperature
  • 1/2 cup packed brown sugar
  • 1/2 cup granulated sugar
  • 1 egg
  • 3/4 teaspoon vanilla
  • 1 cup plus 2 tablespoons flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/2 cup rolled oats
  • 1 cup butterscotch chips
Instructions
  1. Preheat oven to 375 degrees F.
  2. In a medium bowl. whisk together the flour, salt, baking soda, and oatmeal.
  3. Cream the butter and sugars in a mixer on medium speed until light and fluffy about 3-4 minutes.
  4. Beat in the egg and vanilla.
  5. Gradually add the dry ingredients to the butter mixture, until just blended.
  6. Mix in the butterscotch chips.
  7. Place level tablespoons of dough on the cookie sheets about 1 inch apart.
  8. Bake for 10 – 12 minutes or until slightly golden.
