Karen, thank you so much for your comment and the tips, they are very helpful. I'm so happy to hear that you were able to get more cookies out of the recipe than was listed and I love the ideas of using the tart shaper (which I now need to get!), and toasting the pecans. I love toasted pecans, too, and they would definitely add to the flavor profile of the cookie. I'm so glad you liked them!

I don't normally take the time to rate recipes, but I have a few helpful bits of information to share. I used the mini muffin pans per the recipe, but I was able to get 57 cookies out of the recipe. I didn't have to roll the dough into a ball, I just spooned it into the pan, and pressed it down a bit. When I took them out of the oven after the initial baking period, I used my tart shaper, which made it so easy to create a we'll in the center, and it also helped to prevent poking holes from a spoon. I also used all the caramel except for maybe a spoon full. I must've used a whole lot more caramel than the recipe intended, but they came out just right. Toasting your pecans first also adds a little more flavor. I love the taste of toasted pecans over ones not toasted! Overall, a tasty recipe!

Pam, I read that you should be able to leave something made with ganache out at room temperature for 3-5 days, but I wouldn't go any longer than that. Enjoy them!

Such a great recipe and so worth the time. Just made 125 for my daughter’s wedding. I thinned out the caramel a bit more and drizzled and added a sprinkle of salt for an extra kick. So amazing!

Kristie, since I made the chocolate cookie cup from scratch for this recipe, I'm not sure if one box of brownie mix would result in the same amount of Tassies, but I think it would be close.
If you try it, I'd love for you to report back and let me know if other readers would like to do the same.
Thanks!

Carol, you could definitely use the salted pecans if you'd like. I just went for the raw pecans as a matter of personal preference.

It seems that salted pecans would be better to use than not salted to get the sweet-salty combination that the pretzel-rolo-pecan bites have. Or perhaps a pinch of salt could be added to the carmel mixture. Has anyone tried either? What do you think?
