<p>In some ways this cookie bar recipe is even easier than regular oatmeal cookies. No shaping the dough into balls or baking in batches. Just press the dough into the pan, bake and let cool.</p>



<p>When the bars are completely cooled, slice them into squares and serve. These decadent dessert bars pair amazingly with a glass of milk or a hot cup of coffee.</p>

<h3 class="wp-block-heading">Can I make cookie bars in advance?</h3>



<p>These Oatmeal Coconut Bars can be made up to a couple of days before serving. In fact, I find they get even chewier the next day! Make sure to store them in an airtight container to keep them fresh. </p>



<p>After cooling and cutting, you can freeze the bars for longer storage. Stash them in freezer bags and keep frozen for up to several months. Let the bars thaw at room temperature or in the refrigerator until you&#8217;re ready to enjoy them. </p>

<p>These Almond Banana Overnight Oats are an easy breakfast that are made the night before you plan to enjoy them. With almond milk, rolled oats almond butter, maple syrup, flax seeds and mashed banana, it&#8217;s as easy as putting everything into a jar then stirring putting it into the refrigerator to set for the night.</p>

<p>When I&#8217;ve got a busy day planned, an easy and delicious breakfast is a priority.</p>

<h3 class="wp-block-heading">What ingredients do I need to make overnight oats with almond milk?</h3>



<ul class="wp-block-list">
<li>oats<br>I used old fashioned or rolled oats in this recipe and think those are the best type to use, personally.<br>On the oat spectrum so to speak, quick oats or 1-minute oats are too fine and will be too soggy. <br>Steel cut oats are too thick and won&#8217;t soften enough to have them the next morning, but if you leave them in the fridge for two days, then you&#8217;ll be good.</li>



<li>Almond milk <br>Feel free to make this recipe with regular milk, <a href="https://www.365daysofbakingandmore.com/dairy-free-pumpkin-muffins/">soy milk</a>, or another type of <a href="https://www.365daysofbakingandmore.com/cranberry-pancakes-orange-cream-cheese-frosting/">milk</a>. </li>



<li>Almond butter<br>you can substitute it with peanut butter</li>



<li>maple syrup or honey for a bit of sweetness</li>



<li>chia or flax seeds<br>both add additional nutrients and fiber, so either are a great addition to a healthy breakfast</li>



<li>Banana<br>you can&#8217;t make banana overnight oats without it!</li>

<h3 class="wp-block-heading">How Do I Make Overnight Oats?</h3>



<p>If you haven&#8217;t already made oatmeal overnight in the refrigerator before, then you might be a bit surprised at how easy it is.<br>Seriously.</p>



<ol class="wp-block-list">
<li>Using a container with a tight-fitting lid or a mason jar, pour in the almond milk, oats, and chia or flax seeds. <br>Mix to make sure all of the oat have been moistened, and maple syrup.</li>



<li>Mash the banana with a fork in a small bowl. Add the banana and almond butter to the oat mixture. Mix well.</li>



<li>Cover the contents securely with a lid and refrigerate for a minimum of 6 hours or overnight.</li>



<li>Remove from fridge and stir. Garnish with additional sliced banana, sliced or chopped almonds, and or fresh raspberries.</li>

The time of year I&#8217;m talking about is cold and flu season.<br />

<p>We went back to Rhode Island for Thanksgiving and had an absolutely wonderful time with family and friends. Soon after we arrived home, I came down with the sniffling-achy-stuffy-head-etc-fever kind of flu and am ready to kick it to the curb already.</p>

<p>Yesterday morning, this Apple Oatmeal paired with the Original Shamrock Farms Cold Brew Coffee and Milk was just what the doctor ordered. The oatmeal warmed my insides and the Cold Brew Coffee and Milk gave me the energy I needed to finish up some work because it contains 2X the amount of caffeine of regular coffee, and is smoother and less acidic. It&#8217;s 100% Colombian coffee combined with the great taste of Shamrock Farms Milk.</p>
<p>When we moved to Arizona in 2002, I quickly became familiar with Shamrock Farms dairy products, seeing them in the grocery stores. They&#8217;re a brand I&#8217;ve come to know, trust and use regularly. I like that their milk is free of any artificial growth hormones and sourced from local farms.</p>

<p>I&#8217;m especially psyched that Shamrock Farms came out with their Cold Brew Coffee and Milk. Being a Rhode Islander, coffee milk was a staple growing up. While coffee syrup isn&#8217;t readily available in Arizona as it is in Rhode Island (after all, coffee milk <strong><em>IS</em></strong> the official state drink!), Shamrock Farms has given me the next best thing! <div>Our fearless leader of Group C continues to be Angie of <a href="http://www.bigbearswife.com/" target="_blank" rel="noopener">Big Bear&#8217;s Wife</a>.</div>
<div>The Secret Recipe Club is based on the game of Secret Santa that many people play at Christmas time. Every blogger in group A, B, C, or D is assigned another blog in their group from which they are to pick a recipe and then blog about it on their particular reveal day.</div>

<div>The fun part is, you get to &#8220;stalk&#8221; the blog you&#8217;re assigned, searching for a recipe, but not telling the blog owner that you&#8217;ve been assigned to them that month.</div>
<div>It has been so much fun since I started last August! I have been able to explore new blogs I haven&#8217;t known about, tasted many wonderful recipes and the best part, is I&#8217;ve been able to  &#8220;meet&#8221; so many wonderful bloggers. There are so very many talented people out there and it is such an honor being able to learn from and be inspired by them!</div>

<div>And now, the moment you&#8217;ve all been waiting for&#8230; the blog I was assigned to for the month of June was&#8230;.</div>

<div>I was excited to receive this assignment because I had yet to get to know Sara and her blog. And I have to tell you I was AMAZED at the amount of recipes she has accumulated. She has been one <i>busy</i> woman!!</div>
<div>Sara &#8220;loves to cook AND eat&#8221;, but also enjoys showing her love for her family and friends through her food and that is so apparent in her posts. She also has such a warm and friendly smile that I could just see sitting at her kitchen table, sharing a meal and just talking for hours about our love of food!</div>
<div></div>
<div>She has SO many recipes that I know you won&#8217;t be at a loss to find a something for dinner, dessert or even a side dish. Her list is truly amazing!</div>
<div>I really had trouble deciding what to make. I couldn&#8217;t decide between the Crockpot Carnitas, the Fried Rice, the Strawberry White Chocolate Ice Cream or the Gumdrops, but they&#8217;re on my list of to-do&#8217;s!</div>
<div>Oh, and there&#8217;s <i>even more</i>, believe me!</div>

<div>And one of her recent posts, Cilantro Lime Chicken is at the very TOP of my list because I go <b>NUTS </b>for that stuff at Chipotle! I can&#8217;t wait to try it, I&#8217;m so very excited!!</div>
<div>Thank you, Sara, for introducing me to so many of your wonderful recipes! I am excited to explore many of them and expand my family&#8217;s menu (which is always a good thing!)!</div>

<div>I chose the following recipe because we ADORE  muffins here at the 365 home, they&#8217;re simple enough to make, are delicious, and can be made in under 45 minutes, from assembling all ingredients to eating them off the wire rack. And yes, quite a few of them were eaten <i>immediately</i> off the wire rack even though I warned the MR. that they would be <i>extremely hot </i>after just being taken out of a 400 degree oven.<br />
You&#8217;d think I never feed the man, he was so ravenous for these things!</div>

<div>I also chose this particular recipe because I had never baked with cherries before because I really haven&#8217;t been a fresh cherry fan.</div>

And no, you don&#8217;t need to go to the store to purchase a cherry pitter, you can save the money and do it yourself!</div>
<div>I only substituted fresh cherries for Sara&#8217;s frozen ones. Other than that, I kept everything the same.</div>

<div>1 cup flour</div>
<div>1 1/4 cup quick-cooking oats, uncooked</div>
<div>3/4 cup packed light brown sugar</div>
<div>1 1/2 teaspoons baking powder</div>
<div>1/2 teaspoons salt</div>
<div>3/4 cup buttermilk</div>
<div>1/2 cup canola oil</div>
<div>1 egg</div>
<div>1 cup fresh, pitted cherries, quartered</div>
<div><b>Directions</b></div>
<div>Preheat the oven to 400 degrees F.</div>
<div>Prepare a 12-cup muffin tin by lining it with muffin liners.</div>
<div>
<p>In a large bowl, combine the flour, oats, brown sugar, baking powder and salt.<br />
In a small bowl, lightly beat the egg. Add the buttermilk and oil. Mix well to combine.<br />
Pour the buttermilk mixture into the dry ingredients and mix until just moistened.<br />
Fold in cherries.<br />
Distribute the batter evenly among the 12 prepared muffin cups.</p>
<div>Bake for 20-22 minutes until slightly golden brown.</div>
<div>Transfer individual muffins to a wire rack to cool.</div>

<div>I rate everything I make on a scale of 1-4 with 4 being the best and these Cherry Oatmeal Muffins earned 3 1/2 rolling pins. They were quite delicious and a real hit with the family &#8211; obviously from Mr. 365&#8217;s reaction when they came out of the oven. The texture of the oatmeal was great, they were sweetened just enough, very moist, and the bits of cherry were a real treat. These will definitely be on my menu every cherry season!</div>

<p>Finally a granola bar recipe the kids will actually want before dinner. <span id="more-465"></span></p>
<p>I&#8217;m already licking my chops wanting these bad boy granola bars.<br />
With all these ingredients it&#8217;s like a granola bar on steroids.<br />
Maybe I shouldn&#8217;t use that word, but it sure feels that way.<br />
Eh, we&#8217;re going with it.</p>
<p>I never would have thought all of this could be in bar form.<br />
Usually, I&#8217;m the one who eats everything plain and never mixes my meals.<br />
Well, I guess I need to go out of my comfort zone a lot more often now, especially when the things I eat are this good. This chewy granola bar has everything you need, and I mean EVERYTHING.</p>
<p>Plus, the good thing is, or should I say great thing, is that you can add (or subtract) ingredients.<br />
If you find something that works in this granola bar recipe, the more the merrier.<br />
Get a little creative with it, and I&#8217;m sure it&#8217;ll be a weekly baking recipe.</p>
<p>If you really wanted to, you could call this the next protein bar. Maybe I&#8217;m pushing it a little but you could surely do something of the sort with this.<br />
I just love now that when I make these, I wake up and my craving for a big breakfast goes away with one or two bites.</p>

<p>I was ready to slap someone at dinner tonight. And it <i>wasn&#8217;t</i> one of my children.<br />
Mr. 365 was pushing everyone to the limit.<br />
And if you know him personally, you <i>know</i> what I&#8217;m talking about.</p>
<p>When he is in one of his giddy, silly moods he has a tendency to go just one step <i>too</i> far.<br />
Like when I tell him to stop (which I did multiple times at dinner), he always has to say<i> one more thing</i> &#8211; just to get that last word in.</p>
<p>Used to be when we were living in Rhode Island we would have monthly get-togethers with four other couples.<br />
Things would get silly, and inevitably, Mr. 365 would end up saying something to someone leaving people, especially me, shaking my head.<br />
The next morning, he&#8217;d be doing his famed &#8220;Apology Walk&#8221; around our neighborhood.</p>

<p>Tonight though he&#8217;d been making comments to the kids, trying to lighten things up and be a &#8220;cool dad&#8221;, but everyone (mostly our daughters) was becoming a little agitated at his antics, so I told him to knock it off.<br />
For the most part, dinner was finished when one child excused herself having had enough of both dinner and dad, and retreated to her room.<br />
Mr. 365 then proceeded to take a sip of water and pretending to be a water fountain, sprayed it onto himself and part of the table.<br />
