Wow, your pancakes really do look incredible!! I’ve never cooked with a griddle pan (as I don’t have one… I don’t think they’re common in Australia?) but it makes the process look so easy! Love the combination of the lemon zest and blueberries. I’ll definitely be giving this a go, thanks lovely! (P.S I’m new to your blog but loving the variety in your posts, I’ll be back!)

I am a sucker for any type of pancake – I always use buttermilk but never thought to add ground oats – brilliant! Look forward to trying these.

These DO look incredibly fluffy! I love finding new pancage recipes. It’s amazing if you change it just a little bit, how different pancakes can turn out! These look so good, my kids would love these!
