Emily, I&#039;m happy to hear the cookies were still yummy despite the trouble you had with the dough. 
For the next batch, I&#039;d suggest flouring your mat a bit more to prevent the sticking and yes, flour the rolling pin as well. I&#039;ve personally had better luck rolling out any cookie dough on parchment dusted a bit with flour than with a rubber mat (if that&#039;s what you&#039;re saying you&#039;ve used). I do find that it tends to stick more to the mats because as the dough warms, it releases moisture. You could even place a piece of parchment on top of the dough, lightly dusted with flour, so that you&#039;re rolling it in between two sheets which sometimes helps as well. 

Also, after removing the dough from the fridge, allow it to sit for a couple minutes to allow the butter to soften. If the dough is rolled immediately after being taken out of the refrigerator, the butter will be too hard as you roll it making the dough will be more prone to cracking and separating.

Once I had rolled it (floured the mat and rolling pin first) and cut out the shapes, I was prying the poor fragile things off the mat. It stuck so bad! I put it in the freezer between batches and even then it became stuck to the mat within 10 minutes of being worked with. I really want to make these again but this is so hard to manage and the cookies end up tasty but ugly 😂]]></description>

Then to thaw the dough, put the discs into the fridge overnight - that way the dough will still be chilled when you&#039;re ready to make the cookies.
