					<description><![CDATA[Made this pie 30 years ago but I put the pie crust on top to  avoid the soggy crust.   Make apple slices thinner than 1/4 of apple so it bakes quicker.  NO Lemon juice...this causes cream to separate.  Of course, protect crust while baking.  Best pie ever]]></description>

					<description><![CDATA[The apples and the crust turned out really well, but the pie never set in the middle and the cream curdled with the lemon juice.  I think moving forward, I will make the custard on the stove as the apple pie is in the oven and halfway through I will pour it over.  It tastes good, and looks ok....until you cut into it, and then it&#039;s curdled soup. This pie was in the oven at the 425 for 10 minutes, 350 for 60 mins and 375 for an additional 15 minutes.  This pie should have cooked.]]></description>

You might be able to rub the inside of the pie crust with melted butter to create a fat barrier that would reduce the bottom crust getting as soggy.]]></description>

Jens, the liquid is completely normal. There is obviously no thickener such as cornstarch or flour used to help absorb the liquid, but I will give that a try the next time I make this pie and report back. I don&#039;t think adding eggs to the recipe would be the solution. Since it&#039;s a family recipe, it&#039;s just something that has always happened when my aunt or I have made the pie and was something I never questioned.]]></description>
