In reply to <a href="https://www.365daysofbakingandmore.com/cranberry-ginger-pistachio-sugar-cookies/#comment-4862">Amanda</a>.

Amanda, these cookies don't typically spread when baked - if any, it will be only slightly. I try to keep my slices to about 1/4-inch in thickness. Also, if you find that your roll is sort of lopsided when you remove it from the fridge, roll that side on the counter to try to even it out and then the whole roll. If needed, as the dough softens, you can always return it to the fridge to firm up a bit.

I made these once and they were delicious but they didn't spread out while baking. Mine were perhaps cut too thick but they didn't get a nice, flat, round shape. I would like to bake more for Christmas so any tips for better luck this time?! Thanks!

Terrific recipe - especially for Christmas. But I'm puzzled why you would "roll the dough into two logs about 1 1/2 to 2-inches in diameter" then "Wrap both logs in plastic wrap and chill for several hours in refrigerator". Isn't that a lot of unnecessary work? Simply get a couple of strips of 1/4" plywood for guides then roll out the dough between the guides, keeping the rolling pin on the wood to maintain the proper thickness. Chill the dough in the fridge for a bit to harden then simply use 1 1/2" round cutters to make the cookies and bake as directed. You end up with the same result - only a heck of a lot less work!
