In reply to Sherri Hertzog. Sherri, no, I don't recommend substituting olive oil for the shortening, cookies will spread when baked, the flavor will change as well as the texture.

So chocolatey! Not dry at all. My new go-to chocolate cookie recipe for Christmas. I added a 1/2 tsp of cinnamon just for a little something something.
